2 different types of HICKORY SMOKED cheese. These are all smoked with real HICKORY sawdust in a very controlled temperature smokehouse. There is not a lot of difference in temperature between smoking, and melting. We do not use any Liquid Smoke or artificial flavoring. |

Our PEPPERED Jerky is the original recipe plus a lot of course ground black pepper with just a touch of ground cayenne. This is not intended to be a "hot" jerky but a rich, peppered flavor. Of course, black pepper adds some hot taste.

We are in a class of our own on this product. We offer the only "GUARANTEED" NO GREASE Summer Sausage. It is made entirely from ground round of beef. There is no pork, chicken, turkey, any other cuts of beef or any filler. Just Ground Round and seasonings. Like our Jerky, we mix our own seasonings. The meat is approximately 91% lean before cooking. Any leaner and we start to lose taste quality. This is a semi-dry sausage that is very popular with customers that are watching their fat intake. We offer 2 varieties: REGULAR, which has a black pepper taste that we get by putting a lot of cracked black peppercorns in the sausage; and JALAPEÑO, where we cut back on the cracked peppercorns and add jalapeño peppers. This is NOT a hot product. Jalapeño peppers seem to lose most of their heat when they are cooked. We strive for a nice, smooth jalapeño taste without the burn. A very popular product. |
